Preparación de la receta

Cut the onion and sauté it in a frying pan with a little EVOO until it is very soft.

Squeeze the oranges. Add the juice (with the pulp) to the onion and let it cook a little.

Add the evaporated milk and a tablespoon of mascarpone. Mix well and boil for a few minutes.

Season with salt and pepper and sear the salmon in another pan. Do not let it cook too much.

Cover the salmon with the sauce and let it finish cooking and soak well.
