Cut all the vegetables and put them in a pot with the olive oil and a little salt. Sauté. Once it is tender, we take it out and beat the vegetables. Add the wine and wait for it to evaporate.

Add the fish stock and bring to boil, check the salt and rectify (add 1 bay leaf optionally). Add the noodles and saffron and let them cook for the time indicated on the package, about 10 minutes is usually enough. When there are a couple of minutes left, add the mackerel (previously cleaned and without bones) and let them cook with the heat. Set aside and let it rest for a few minutes. Plate and serve.
