Croquettes of stew meat (traditional recipe)

Boil two eggs. Once they are cooked, set aside.

Cut the onion into very small pieces and sauté.

Add the shredded meat (the meat is the one used for the chickpea stew) to the pan and fry for 5 minutes. Peel and cut the two hard-boiled eggs into small pieces and add to the pan.

Add the flour and salt and stir until the flour is toasted.

Add the milk and let it boil slowly until all the ingredients are integrated.

Let the dough cool. Shape the croquettes (I do it with two spoons), dip the dough in egg (previously beaten 1.5 eggs) and then in breadcrumbs.

Store on a tray and freeze or bake/fry and eat.
