Preheat the oven to 200° up and down heat.

Cut the plantains into slices about one finger thick and add a dash of EVOO and salt to taste. Place them on the baking sheet with parchment paper. Separate the banana slices, since we will crush them later. Bake in the oven for 15 minutes.

After 15 minutes we take them out of the oven and crush them with a glass that we have previously put cling film so that it does not stick. Once they are all flattened, we put them in the oven for another 15 minutes or when we see that they are golden brown.

For the guacamole: Mash the avocado with a fork. Cut the onion finely and add it to the avocado. Salt to taste and add a little tabasco (optional). We can also add some fresh coriander. Taste before serving to correct quantities, as I do it by eye.
