White bean stew with mushrooms and paprika 🍄

Wash the mushrooms well and let them drain. Then chop them not too finely, taking into account that they lose water during preparation.

Drain the beans and wash them for a long time under cold water.

Chop the garlic and fry it with the EVOO. When they begin to brown add the sweet paprika.

Then add the mushrooms and stir well. Season with pink salt and black pepper. Let them cook for about 10 minutes, until you see that the mushrooms are starting to be soft. It is convenient to leave the water that the mushrooms are releasing to cook the beans later.

Finally, add the white beans and stir everything very well. Let it cook for about 2 minutes and add a glass of water. Cook with the lid on medium heat for about 10/15 minutes, until you see that the stew takes body and the water has evaporated to a large extent.

Turn off the heat and let it rest for about 5 minutes. In this step I add a pinch of parsley, just before serving.
