Iberian pork ribs with potato garnish

The first thing to do is to season the pork ribs once cut into pieces (bones). First in a bowl we put three tablespoons of oil to which we add two teaspoons of paprika, a little garlic powder, five or five or five fresh parsley leaves in pieces, a small spoonful of nutmeg and, if desired, a teaspoon of paprika negrl. Stir. Then we season the ribs with it and add salt. Let it rest for about 15 minutes. Preheat the oven to 250 degrees.

Afterwards, we cut an onion or half of it and put it in a bowl for the oven with some drops of oil where we will also put the meat. We put it in the oven for 25 minutes and ten minutes to rest. In the meantime...

... In a pot we are going to put three potatoes to cook with skin. After 20 minutes we take them out, cut them and let them cook for another 10 minutes with two bay leaves.

While it is cooking, we chop two cloves of garlic that we will mix with three spoons of oil and Provencal herbs.

Remove the roast from the oven and put the potatoes in a bowl, add the mixture of oil, Provencal herbs and garlic to the potatoes. And ready
