The first thing to do is to cut the garlic fillets and brown them in oil with the chili peppers. Set aside on a plate with absorbent paper. Be careful not to burn them or the oil will become bitter.

Then in the same oil we confit the cod over low heat for about 4 minutes on each side. You will see that the fish will release the gelatin. Reserve the loins and wait for the oil to cool down. On the other hand, cook the leeks in a casserole with water and salt for 10 minutes.

With the oil tempered we will give circular movements to the casserole, you will see that the whey will bind with the oil. Use a small strainer (moving the sauce in circles) to lighten the process.

Add the loins to the sauce, garlic and chili peppers over medium heat (5 min. approx.). Dry the leeks and sear them in a frying pan with EVOO. Serve and decorate with parsley. Enjoy! 😋
