Cut the vegetables into cubes the size of a fingernail and sauté them in a paella pan.

Clean the baby squid, cut them into slices and add them to the sauce.

Add the tomato, cook it a little and add the wine.

When the wine has evaporated, add the rice and fry it well, so that it is well impregnated with the flavors.

Add enough water or broth and saffron threads to taste and let it cook over medium heat, without boiling too hard, homogenize it at the beginning but then do not touch it more, as far as possible.

When the water has evaporated, lower the heat and let stand for a few more minutes.

Serve it very hot, directly from the paella pan.

In my case I have accompanied it with half a lemon, but that is to taste, you could also put all i oli.
