First, boil the pasta until it is al dente. When the water is boiling, add the pasta and a pinch of salt.

In the meantime, we can chop the Serrano ham, grate the Grada Padano cheese and grill the egg with a dash of EVOO. The grada padano cheese is grated in a separate bowl.

When the pasta is ready, the cooking water is collected. Add a spoonful of this water to the cheese, as well as the pepper, the paprika, the salt and the spoonfuls of EVOO, and stir until a sauce is formed. With the cooking water more flavor and sauce consistency is achieved.

Add this sauce to the pasta and stir well until homogenized.

Add one grilled egg for each portion of pasta and enjoy!
