Chop two tomatoes and two onions into cubes.

Cook two eggplants and two chopped ripe plantains, add to a pot with water and salt.

Crush two cloves of garlic with a little salt.

Sauté the tomato, onion and garlic with salt, pepper and oil.

When the plantain and eggplant are soft, drain completely and add to the glass bowl. Mash with a little butter and then add the sofrito little by little until the flavors are incorporated.

Add salt and pepper to taste, add a little cheese and when well mixed, serve and plate with a little Latin cheese on top.

This is the GREEN BANANA that ripens. You can get it in Latin greengrocers or ripen it at home (a GREEN PLANTER you line it with newspaper and place it in a dark place and check it every two days or so until it ripens).
