Cut all the vegetables into small pieces and add them in the following order to the pot with a little EVOO: - onion (until it is poached) - garlic + leek (to soften) - carrot (2 minutes)

Add the chicken, the vegetable broth and water to cover the chicken thighs. Add the spices and two bay leaves.

Lower the heat to medium/low and leave the chicken covered until it is cooked. We can add more water if the broth is too dry and add a spoonful of flour if we want the sauce to thicken.
