Goat cheese and garlic croquettes

Poach the garlic (fresh) and the onion with a little EVOO in a frying pan. Set aside.

In a saucepan over medium high heat melt the butter and then add the chickpea flour and whisk well so that it does not stick.

Add the warm soy milk while whisking and continue whisking until the texture is creamy and more consistent.

Add the poached onion and garlic, pieces of goat's cheese, a little nutmeg, salt and pepper.

Put the dough in a tupper or glass container and cover with plastic wrap and let it rest in the refrigerator for a few hours (I do it overnight).

When we are going to make the croquettes, we put first in a plate 1 beaten egg, in another oatmeal and in another a slice of dextrinated bread Santiveri made crumbs (with a slice is enough to make about 5-6 croquettes).

Dredge the croquettes in oatmeal, egg and finally in the crumbled bread, which will give them a crunchy touch, and place them on a baking tray.

Bake at 200 degrees for 10-15 minutes and ready.
