Brown the zucchini pieces with a little EVOO. While they are browning, beat the two eggs and add salt, black pepper and Havarti cheese!

Once the zucchini is soft, add the egg with the previously beaten cheese. Cover the fire and let it cook. Once it is done on the bottom, turn the omelet over to cook on the other side!

Take it out of the pan and spread the cream cheese, add the turkey slices and the spinach (I also put them in the pan beforehand).

Once done, roll it up like a roll and serve! I served it with soy sauce!
