Sauté the peppers, mushrooms and onion over low heat with EVOO *I have added a dash of cognac to the sauce to give a more intense flavor.

Once the sauce is getting color add the chicken cut into strips and let it cook over medium heat while adding a splash of soy sauce and spice with curry, you can use a mixture of curry-cumin.
