Cook the spaghetti together with the two tomatoes. In a separate pan fry the onion and the garlic clove.

Add the cooked mussels to the sauce. Remove the tomatoes from the pot and peel them.

Put the tomatoes in the blender and once blended, add them to the sofrito and the mussels.

Remove and strain the spaghetti and add it to the pan with the mussels and the sofrito. Mix well and add salt, pepper and parsley.
