First, make the date paste (this time I recommend that it be a little more liquid, similar to a syrup). Soak the pitted dates in warm water and then mash very well.

Mix in a bowl the olive oil (the higher the better), the orange zest, and the date syrup. Gradually add the ground almonds and then the whole wheat flour.

Avoid kneading, the dough should be made into a "granulated sand" and when you take a little of the mixture and flatten it, it should be compact.

You can make the polvorones only with your hands and achieving the desired shape or the other option is to put all the mixture on a surface and flatten it with a rolling pin until it is compact (with the desired thickness). With a circular mold cut the polvorones and transfer them to a tray with baking paper.
