In a large frying pan or paella pan, cook two of the 4 squid to taste and remove.

Make a sofrito with very chopped garlic and a crushed tomato. Add salt and sweet paprika.

Once done, add the other two squid cut into rings and fry for a couple of minutes.

Add the rice and the sachet of saffron powder. Mix everything well.

Once integrated, add the broth. We will have previously heated it and dissolved the ink in it.

The first 5 minutes over high heat and then over medium low heat. When it is almost ready we put it in the oven up and down 2-3 minutes at 180-200 °C. The overall time will always depend on the type of rice, the size of the pan or the size of the fire, as well as the amount of broth we need.

Optionally, we paint the two squid on top with a mixture of oil, garlic and finely chopped parsley!
