Boil the potatoes in their skins for 40 minutes. After 20 minutes, add the carrots to the same casserole. After 30 minutes, add 1 egg and cook together with the potatoes and carrots.

Mix cooked ingredients with the chopped and pitted olives and the crumbled tuna in a large bowl.

For the MAYONNAISE: crush 4 hard-boiled eggs, 4 tablespoons of AOVE, a splash of water, a little lemon juice and salt in a blender glass. Adjust with more water if it is too thick, and salt.

Mix with the potato, carrots, tuna, egg and olives and serve with whole rye toast. Garnish to taste and enjoy!
