Grill the zucchini in a frying pan with a little EVOO. Brown it a little.

Beat the egg (which can be two eggs instead of one) and pour it into the pan. Spread it. Turn it over.

Remove to a plate. Make a cut up to the middle (without reaching the end) to make a "fajita". Put one ingredient in each quarter: Turkey, tomato, lettuce and cheese. Fold and close and brown it in the pan a little more.

And that's it! You can add a sauce on top. I used mustard, but it can be ketchup, barbecue, mayonnaise...
