Chop all vegetables into small squares and sauté with two tablespoons of olive oil over medium heat (except tomato. reserve).

In the bowl, beat the eggs (4 eggs for the portion in the photo).

Add the tomato to the pan and stir to mix with the other sautéed vegetables (a couple of seconds).

Add the eggs to the pan, salt and pepper. Do not stop stirring. You will see how it takes consistency (cooking depends on your preference).
