Pizza with zucchini base 🥒

We start by grating or chopping the zucchini (you can also grind them with the blender). I use 2 if they are large or 3 if they are medium.

We put them in a clean kitchen towel and drain the water.

Then grate the mozzarella. In a bowl mix the zucchini with a handful of grated mozzarella, chickpea flour, salt and spices. When mixed and kneaded well, the dough is soft but does not stick to the fingers and is very manageable.

Preheat the oven to 200°C, cover a baking tray with baking paper and grease it with a little EVOO (you can use a kitchen towel to spread the oil).

Place the dough in the center and spread it with your hands or with the help of a spoon, giving it the desired shape.

We put the dough in the oven (at medium height) for about 15 minutes until we see that the edges are slightly toasted.

Take the dough out of the oven and remove it from the paper. You will see that the part underneath is the most toasted. I like to turn it over and leave the toasted part on top (so the other part will toast later).

Now we can add a couple of spoonfuls of fried tomato (homemade or bp), the mozzarella we had left and ingredients to taste! I love to add everything!!!! In the oven for ten more minutes and enjoy!!!! 🥰
