To make the dough, mix the flour and butter (at room temperature) with your fingers until you get a crumb texture.

Then add 1 tablespoon of EVOO, 1 teaspoon of salt and the water, and mix again. Preheat the oven to 180°C.

Roll out the dough with the help of a rolling pin and place it on the mold (I used a 26 cm silicone mold).

Prick the dough with a fork and bake at 180°C for about 15 minutes (until almost done). Then set aside.

In the meantime, chop the onion, slice the mushrooms, cut the cooked ham into small crunches and boil the spinach.

Stir-fry the onion with a dash of EVOO and when it is getting color add the well-drained spinach. Add salt and pepper to taste.

Sauté the mushrooms separately in case they release too much water.

In a bowl mix the eggs and cream. Then add the mozzarella cheese, the ham, the spinach and onion sofrito and part of the mushrooms (save a few for decoration). Stir.

Pour the mixture over the dough and decorate with pieces of brie cheese and some mushrooms.

Bake at 180°C for approx. 25 minutes and enjoy!!!🤩
