Cut the zucchini into thin slices.

For the filling: Cook the spinach and mix with the previously toasted pine nuts and the ricotta cheese. Add the black olives (optional) and spices to taste (garlic, onion, salt and pepper). For the sauce: Sauté onion with carrot, green bell pepper and crushed tomato. Once everything is poached, grind the sauce.

Finally, place the sliced zucchini on a tray and make a cross shape, in the center, place the filling and make a fold in order to obtain a ravioli shape. Preheat the oven to 200°C and put the sauce on the base and the zucchini in a baking dish. We will have it in the oven about 15 minutes or until it is soft and optional you can gratin cheese on top.
