Brown the chopped onion with the oil. Add the red bell pepper previously washed and cut into small squares.

When both ingredients are ready, add the crushed tomato. If you do not want to add a large ripe tomato, peeled and diced, you can add about 100 grams more of crushed tomato.

Add the spices. Optional: The original recipe has a little sugar, I didn't add any but if you want you can add a teaspoon of date paste.

Let the mixture cook for about 10-15 minutes until it begins to thicken.

Make some holes for the eggs and add them. Put the lid on and let them cook over low heat for about 10 minutes until they are ready (I like the yolk to be runny).

Add parsley leaves to decorate and EAT!
