Eggplant, avocado and cheese fajita

First we are going to prepare the eggplant. 1️⃣Lavamos and cut the eggplant into squares. We put it in a bowl with water and salt for 10 minutes to remove the bitterness. Drain. 2️⃣La cook in a steam case (Lékué) in the microwave for 8 minutes, with the grid and a little water. If you do not have a steam case, it can also be done in the microwave, but for a few minutes longer. 3️⃣En a frying pan with a little EVOO fry the 3 cloves of garlic over medium heat. Add the eggplant, salt and garlic powder and sauté.
