Eggplant stuffed in airfryer

Cut the eggplant in half and make diagonal cuts in both directions, add a little oil, salt and pepper and put it in the airfryer at 180º (I have had it for about 15 minutes, but it depends on each one, it is best to keep an eye on it and when it is well browned we take it out).

Meanwhile, poach the onion with the mushrooms cut very small.

Add the minced meat, chicken in my case, with salt and pepper and brown.

When we take out the eggplants, with the help of a spoon we take out all the flesh of the eggplant.

Put the eggplant flesh in the frying pan with the minced meat and the grated tomatoes (you can also add crushed tomatoes directly), and mix everything well until the tomato is slightly cooked.

Stuff the empty eggplant and add the grated cheese and grana padano (for me it gives a very good touch).

We put it in the airfryer until the cheese is melted and gratinized and ready 😋.
