Pour the oil in a frying pan and when it is hot add the garlic and onion (I chopped them with the blender's chopping attachment). Fry over medium-high heat until golden brown, stirring from time to time. If you run out of oil, add a little more.

Add the rest of the ingredients (tomato, tomato concentrate, salt, pepper and oregano), except for the fresh basil. Stir and cook over medium-high heat for 10 minutes with the lid on and then another 10 minutes with the lid off, over medium heat.

Add the basil leaves, stir and cook for 5 more minutes.

We can drink it hot or let it cool and we can keep it in the refrigerator for a week.
