In one bowl we prepare the spices and in another bowl the glaze. 1) For the glaze bowl : mix fresh ginger + ketchup + soy sauce + honey. 2) Second bowl all the other spices all ground.

The wings are washed, cleaned of feathers and dried well. Add salt, pepper and spices and half of the glaze and leave to marinate for 1 hour.

Place the wings on a baking tray on baking paper and cover with aluminum foil for 30 minutes at 200 degrees.

After the time has elapsed, take the wings out and brush each one with glaze and put them back in the oven for 10 minutes. Then take them out and turn them over and give them another sweep of glaze and the sesame seeds and bake them in the oven for another 10 minutes but we raise the temperature to 220-230 to toast them.
