Season the rabbit with salt and pepper and fry it with a drizzle of EVOO in a frying pan. When ready, remove.

Cook in a frying pan the red bell pepper and a clove of garlic in small cubes, with a little salt and the peas. When they are soft add 3 spoonfuls of crushed tomato and mix well.

Add two glasses of white rice and mix. Then add water and salt. Let it cook and if we want it softer we add more water to taste. When it is ready we put the rabbit on top and let it rest a little before serving.
