The first thing we must obtain is a piece of tuna or any fish that you like thawed. Since it is going to be eaten marinated, it should be frozen for at least 48 hours. Once we have this, the preparation is quick and easy.

First of all, we cut the piece of fish into rectangular cubes. The size is to taste, I like to make them quite large and then slice them into thinner pieces. Once we have the elongated cubes, heat a non-stick frying pan and sear all sides of the tuna for 3 seconds on each side. Sealing all the tuna without letting it cook inside.

Once we have the tacos sealed, we put them in a small container filled with soy sauce. I use a small tupper and pile up the tacos so that the soy sauce covers the fish without wasting too much sauce. Leave to marinate for about 30-40 minutes.

In the meantime, marinate the fish. Prepare the mushrooms and the sauce. Chop the mushrooms and sauté them in a very hot frying pan to make them a little crunchy. When they are finished, add a little soy sauce to give them a special flavor to match the rest of the dish.

The fish sauce is simple but essential! You have to squeeze 1/2 orange and 1/2 lemon and to this juice add a piece of ginger (size according to taste, I love it so I put a piece the size of a teaspoon more or less). This mixture should be beaten, but just before serving the tuna, because otherwise the ginger is deposited and is not well mixed at the time of eating.

Once the fish is marinated, toast the sesame seeds in a frying pan, stirring well so that they do not burn. Then remove each piece of tuna and dip it in the sesame, remove each piece to a cutting board and cut into slices.

Serve the tataki with the mushrooms and accompany with soy sauce and citrus and ginger sauce, ideally dipping each piece in both sauces. This dish can be combined with other accompaniments, whatever you like! I, for example, love it with alfalfa!
