Preheat the oven to 200 degrees up and down heat. Cut the potatoes and spring onions into thin slices. Add olive oil and salt and pepper. We put them in the oven until we see that they begin to brown.

Clean the fish and add salt and pepper inside. Add a little olive oil. Close the fish and make two cuts in the upper part and insert a slice of orange in each one. I also added another slice inside the head. Save half an orange for later.

As soon as the potatoes are golden brown, put the fish in the oven. I had it 20-25 minutes at 200 degrees up and down heat, but it depends on the oven.

While we have the fish in the oven, we can prepare a majado. I used toasted almonds, parsley, salt, a little garlic and olive oil. I added the orange juice from the half we had reserved. I highly recommend making one to our taste and adding it raw once the fish is ready to be served.

When the fish is to your liking, plate it and add the majado! Enjoy! 🙈
