Very interesting zucchini scrambled eggs

Wash the zucchini well and grate it, let it stand with a little salt to drain the water.

In a frying pan, with a dash of EVOO, cook the onion, zucchini and mushrooms until they are pricked.

Season with salt and pepper and add the spices of your choice

Add a teaspoon of cream cheese and a tablespoon of Parmesan. Unify everything.

Beat two eggs and add them to the pan. Mix until the egg curdles (it depends on how you like your eggs).

Place the scrambled eggs on a plate and add the spinach, sliced cherry tomatoes and sliced avocado on top. Add a splash of EVOO and top with a little salt and the spice of your choice for the avocado (I use a Mexican mix).
