Beat the eggs in a bowl, add the leek and potato and mix well.

Pour almost all the mixture into a non-stick frying pan. Cut the brie into thin slices and place on top. Cover with the rest of the egg, leek and potato mixture.

Cook over medium-high heat for about 3-4 minutes. Turn and cook for another 3-4 minutes.
