Preheat the oven to 180 degrees. Put the noodles in a paella pan and a spoonful of oil and stir well so that everything is impregnated. Put in the oven for 12 minutes (stir well after 6 minutes). The noodles will be toasted. Reserve and do not turn off the oven

In a frying pan put two spoonfuls of olive oil and add 5 unpeeled garlic. When they are golden brown throw away. In the same oil fry the peeled prawns and set aside. Transfer the ingredients from the frying pan to the paella pan where the noodles are and put on the fire. Immediately add the fish stock, the reserved shrimps and the prawns. Cook until the broth is reduced (check that the noodles are tender). If when the broth has reduced the noodles are not tender, add more broth and continue cooking on the fire), add salt and put in the oven. Remove when everything is golden brown and dry on top.

Make the allioli (or rather garlic mayonnaise). Remove the germ from the garlic and put it in the blender with the oil, an egg and salt. Beat until it thickens.
