Peel the potatoes and put them in a pot with boiling water and a little salt until they are cooked.

In the meantime, cook the eggs in a saucepan.

Cut the onion and place it in a frying pan with a little EVOO and salt until it becomes transparent.

Cut one orange and squeeze the other to obtain the juice.

In a bowl, add the potatoes, orange, chopped boiled eggs, peppers, onion and tuna fish.

Place in the refrigerator for about 30 minutes to cool.

Remove from the refrigerator and add the orange juice and Provencal herbs to the salad.
