Arepa fitness filled with chicken and light avocado and lime mayonnaise

Pour the water in a large bowl, add the salt and the EVOO and stir. Add the special corn flour for arepas, do it little by little, stirring all the time. When it is difficult to stir, knead with your hands to remove the lumps for about 2 minutes. Let the dough rest for 5-10 minutes. Slightly wet your hands so that the dough does not stick, divide it into small balls and shape them into arepas by flattening them with the palms of your hands (1 cm thick).

Heat a little oil in a frying pan and cook the arepas over medium heat for 5 minutes on each side or until golden brown. Set aside and let cool slightly before filling.

In a blender cup, add a couple of tablespoons of cheese spread, the boiled egg and the juice of 1/2 lime. Blend until a mayonnaise is formed. Add salt to taste.

Prepare the filling with the shredded chicken (or heura), the finely chopped avocado and the lime mayonnaise. You can add chopped spring onion if you like, it goes very well with it.

Open the arepas in half and fill them with the previous mixture. You will see how delicious! And with a totally light mayonnaise!
