Clean and chop the squid (in my case they are fresh from the fishmonger's but the app does not have it registered).

Chop the onion, garlic and peppers and sauté with the EVOO in a pot or casserole.

Add the squid to the sauce and season with salt and pepper, once it has picked up the spices, salt and pepper, let it cook to cook the squid.

Finely chop the tomato and add it to the casserole, let it cook and add the paprika de la vera, stir and add the wine. Let it cook so that the alcohol evaporates.

Chop the potato into pieces and add and cover with water. Let it boil and once it boils 30' of cooking and 5' of rest.
