Macaroni and cheese with tuna

Cook the whole wheat macaroni in salted water with a bay leaf. Once cooked, strain and set aside.

While the pasta is cooking, cut the onion and tomato into small pieces. Add a splash of EVOO in a frying pan and when it is hot, add the onion and tomato and stir for 2 minutes. Add the macaroni and mix.

Add the tuna and cheese and mix well until the cheese has melted. Serve in a deep dish and sprinkle a little parsley.
