First of all we will make the sweet potatoes in the microwave. Wrap the sweet potatoes with plastic wrap and put them in the microwave at maximum power for about 15 minutes. We check if they are cooked or if not we put them a little longer. You can do the oven option but it is slower.

While it is still hot, peel the sweet potatoes and mash the flesh with a fork until it has a mashed texture. Add the salt, the drizzle of oil and let it all homogeneous.

We add little by little the flour and we knead until it comes off our hands. We add more or less flour as we see it.

Then with the homogeneous dough we make cylinders of dough and cut into small pieces with a knife. Then knead the dough into balls and shape the gnocchi. I reserve them with flour so that they do not stick together. You can keep it perfectly in a tapper in the fridge but always with flour.
