Wash the tomatoes and cut in two, wash and drain the arugula. Cut the cheese into cubes

Beat the eggs and season to taste with salt and pepper.

In a frying pan, heat a tablespoon of oil over medium heat and when hot, pour in the eggs.

As the omelet cooks, lift the edges and allow the uncooked eggs to flow underneath.

When the omelet is almost cooked, add the arugula, tomatoes and cheese cubes.

Cook for a few more minutes until the cheese melts.

Fold the tortilla in half and slide it onto a plate.

Serve with a salad and some crusty bread.
