We start by cutting the potatoes into pieces. Preheat the oven. When it is hot we put them in with a little oil and salt. At 180° fan. We leave them at least 30 minutes. Until they are golden brown.

BRAVA SAUCE: cut an onion and a few cloves of garlic, sauté cloves of garlic, fry with a drizzle of oil. Add 200ml of water and 100ml of chicken broth. Let it boil a little. Add two small teaspoons of paprika and two large ones of whole wheat flour. Let it cook until the onion is ready.

We pass through the blender, add salt, pepper and cayenne to taste. Taste. If it is too thick we can add some more water.

ALIOLI: add milk and double the AOVE. Gradually add it and whisk. Add garlic, salt and lemon and blend.

When everything is ready. Place the potatoes on a plate and add the sauces on top. Ready!
