Potato omelet with "sobrasada" and goat cheese

To prepare the "sobrasada": *Boil the dried tomatoes (previously hydrated) for about 15min. *In a recipient we put the oil, all the spices, the black garlic and the drained tomatoes. *We beat well and add a little water of having boiled the tomatoes if we see that it is necessary, until it is a paste. WARNING! We are not going to use all the sobrassada for the omelette, what is left over we keep it in an airtight jar to consume during the week.

To prepare the tortilla: *Fry the potatoes in oil and drain the oil well. *Beat the 4 eggs and add the potatoes without oil, "sobrasada" to taste and the goat cheese cut into small cubes. *Heat the frying pan and add the mixture when it is very hot. *We turn the omelette when we see that it is already done on one side, we leave it to be done on the other side. Yyyyyy.... ¡¡¡¡Listo!!!!
