Start dough: put the milk and yeast in the thermomix or food processor and mix 2 min, 37*c, speed 2.

Add the flour and mix 15 seconds at speed 6. Remove the dough and shape it into a ball, put it in a bowl with water and leave it until it floats. Approximately 10-15 minutes it will be ready.

Add the rest of the ingredients in the thermomix mixing bowl, and when the dough starts to float, add it too. Knead 3 minutes on spiga speed. When finished, let it rise for 40-60 minutes in the mixing bowl, until it doubles in volume.

Once it has doubled it is ready to make the muffins. Sprinkle the marble with a little flour to prevent sticking. We make a roll and cut into portions of 80-90 grams and place them on baking paper. Flatten the portions a little to give them a circular shape. And cover. Again with a dry cloth of cocona and let it double 60 minutes more.

Heat the oven to 200*c with heat up and down and place the muffins on the tray. Bake for about 15 minutes at 180 degrees with heat up and down. Do not toast the bread too much, otherwise it will be a little hard.
