In a bowl, mix the grated carrot, the eggs, 120gr of date paste and the EVOO. Stir.

In the same bowl, add the flour, baking powder, cinnamon and chopped walnuts. Mix.

Pour the mixture into a greased microwave-safe mold.

Microwave for 10 minutes at maximum power.

Topping: mix mascarpone cheese with 60 g of date paste.

Spread the cake with the icing and decorate with walnuts.
