- 100 grams of date paste (dates in hot water for 15 to 20 minutes and mashed) - 100 grams of lard (tomorrow I will try the recipe without lard) - 35 milliliters of orange juice - 35 grams of mild olive oil (for the dough without lard it would be 135 grams of oil although I have not tested it) - Lemon zest - 2 egg yolks - 280/300 grams of whole wheat flour (starting from 250 grams, add little by little so that it is not too dry).

1. Mix all the ingredients except the flour. 2. Integrate the flour little by little and mix with your hands until it forms a ball (it does not have to be sticky). 3. Put some flour on the worktop and roll out with a rolling pin. 4. Preheat the oven at 180° for 20 minutes. Make the shape of the cookies. 5. Put the cookies on a tray (or rack) with baking paper and bake at 180° for 20-25 minutes (keep an eye). 6. Wait for them to cool and eat!
